The fermentation process of kombucha is an art and science at the same time, turning a simple sweet tea into a drink rich in flavor and beneficial properties. It is based on the interaction between tea, sugar and a culture of microorganisms known as SCOBY (symbiotic culture of bacteria and yeast). The fermentation process is divided into several stages:


1. Preparation of sweet tea

It all starts with making the base for kombucha — sweet tea. To do this, tea (black, green or herbal) is brewed in hot water, after which sugar is added to it. This sugar serves as nutrition for the SCOBY culture.


2. Adding SCOBY
After cooling the tea to room temperature, SCOBY is added to it along with a small amount of the previous batch of kombucha, which acts as a "starter". This helps speed up the fermentation process and maintains an acidic environment, preventing the growth of unwanted bacteria.
3. Fermentation
The mixture is then left to ferment at room temperature for 7-14 days. During this process, yeast converts sugar into alcohol, and bacteria convert alcohol into acetic acid. This process creates the characteristic sour taste of kombucha and enriches the drink with various acids, beneficial bacteria and vitamins.
4. Secondary fermentation (optional)

After primary fermentation, kombucha can be subjected to secondary fermentation by adding fruits, berries, herbs or other ingredients for flavoring. The drink is tightly closed and left for several days for fermentation, which allows carbon dioxide to develop and enhance the taste.


5. Filtration and spilling
At the end of fermentation, the drink is filtered to remove SCOBY residues and added secondary fermentation ingredients. After that, the kombucha is ready for consumption and can be bottled.
6. Storage
Ready-made kombucha should be stored in the refrigerator to slow down the fermentation process and preserve its freshness and taste.
